Eight Immortals (Ba Xian)


This lot is one of our handmade, small-lot Phoenix Bird Oolong Collection teas. Made especially for Silk Road, it offers a softer version of the characteristic and distinctive "peppery or tangy" notes of these famous Dan Cong oolongs.  "Ba Xian" is the varietal used to make this lot.  Lot # PR-BX.

Why we selected this lot: We visit this village every 2-3 years and get to taste teas with local tea makers.  This farmer has supplied wonderful lots of tea before and this lot reminded us why these Oolongs are so popular.  It was made from an Oolong tree (once a tea bush that has over 50-100 years grown into a tree). The depth of these trees roots and the minerals provided by the soils ensure depth and nuance to its flavor. At the same time, we noted a smoothness that is unique to this Dan Cong.

Interesting facts about this lot: "Ba Xian" is the varietal used for this lot.  The tea was harvested at an elevation of approximately 800 meters. The lot is handmade and only in a very small quantity.  Using round bamboo mats, the tea maker patiently breaks down the cell structure of the leaf edge. As the leaves are processed, the air fills with a rich aroma of “Mao Cha” as it withers, oxidizes and releases intoxicating flavors.  The leaves are processed for about 12 hours,  developing and awaiting the aromas that signal the leaves are ready for firing.  

Taste profile: Soft flavor, no edge to this tea.  The brown, edged-in-red colored leaves yield a light fruit taste that lingers with only a hint of a slightly tangy note.  

Brewing suggestions: A rounded teaspoon will service 8-12 ounces of water.  Use water right at boiling temperature, rinse the leaves briefly, pour off and re-infuse the leaves.  Steep for 1.5 to 2 minutes and taste.  Between infusions, drain the leaves of water to preserve flavors and ensure 5 to 7 steeps.

Visit a small house in Feng Huang, sit by a fireplace, and drink cups of oolong. Farmer's lot is wonderful. Farm is quite small, not many trees. A lot may comprise less than 2 kgs in quantity for the year.
