Elegant long, slender and twisted leaves unfurl to refreshing tastes of almond and fruity sweetness.  Grown on terraced mountainsides high in the Phoenix Mountains of Guangdong Province, this tea is one of China's prized oolongs.  Revered for its complexity, it is widely sought after and enjoyed by tea lovers worldwide.  The leaves are harvested from single truck trees with roots that delve deep into rich soils to create flavors unparalleled in their richness.  Lot # Teacher.

Why we selected this lot.   This lot was handmade by man only introduced as Teacher.  His tea was widely known in the area as much for its quality as for the fact he has been making Dan Cong oolongs for as long as anyone can remember.   The leaves are far larger than one typically will find today and arguably come from trees that may no longer be in production as this lot was procured about 14 years ago.  It has been carefully stored, preserving its wonderful flavors.  

Interesting facts about this lot.  This oolong is classified as a single-trunk oolong.  The tea bushes have been allowed to grow into small trees.  A Dan Song style, it is much prized in China and is classed as a famous tea.  The yield from these trees is quite small further contributing to its status in China.  This lot was harvested from trees at an elevation of 850 meters.  This lot was hand crafted according to traditional processing methods.

Taste profile.  The taste of this oolong is nectar-like.  Mouth filling and refreshing, the high-fire processing of the leaves yields notes that are honey-like and smooth.  There is a long finish to this tea.  One will note residual flavors long after cupping.  It is strong, shorter steeps are advised.

Brewing suggestions.  Use plenty of leaf and infuse the leaves Gong fu style using short steeps.  Water temperature should be at boiling, rinse the leaves briefly, pour this off waking up the leaves and then re-infuse.  Steep for one to two minutes and taste.  Use a shorter steep time for Gong fu service.  Tea will steep multiple times.
