Our private collection Phoenix Bird Oolongs, from the tea-famous Feng Huang area of Guangdong, are found in small lots, generally one to two kilograms per year and are not teas found in the market. These Dan Cong style oolongs are picked from trees in the mountains that are, in cases, 100 to 500 years old. The leaves are carefully processed by artisans (school teacher, tea farmers), who learned their trade from ancestors. Long, thin leaves, hand-worked multiple times, show hues of dark brown-green and red reflecting the bruising of the leaf to release vital juices that create the tastes for which these teas are world famous. Repeatedly fired over charcoal to capture and arrest these tastes, these oolongs can be toasty, sweet and tangy, fruity and honey-like and will certainly infuse numerous times, all the while releasing new tastes to the palate. No two lots are ever the same. These select lots are available in limited quantity.
