This year's Tian Mu Qing Ding is one of our most aromatic and flavorful teas. A "famous tea", grown in Zhejiang Province, this prized, high-mountain varietal is harvested only for a very brief period each spring in the Tian Mu Mountains. This brief harvest window is reflected in small and very tender leaves that make this famous tea. Rich green in color, these leaves yield a sweet, natural taste that cups to a light-yellow liquor. Jasmine Pearls is a delight to watch unfold as well as to drink. Early-picked green tea leaves are carefully rolled into small pearls with a white downy striping. Once rolled, the pearls wait until the jasmine flowers are harvested later in the summer. For a high-grade pearl such as ours, the flower petals are introduced and then removed after imparting their fragrance, a process that may be repeated up to seven times. Our supplier's family has been making jasmine teas for generations in Fujian Province and his skill is evident. This tea is exquisite, a sweet and delicate green redolent with fresh scent of jasmine.

A Fujian Province spring green made of small, dark green, rolled leaves with just a hint of white-downy coloration. Consumed primarily in the province, it is not well known and its taste is provincial . It well exemplifies the endless varieties and styles farmers are capable of making. This tea will cup to a deep yellow-green color, strong with hints of asparagus and some astringency along with the vegetal notes. Our Sencha is organic, the leaves are long and a rich, emerald green color flecked with shades of lighter green. Taste is slightly astringent and produces a yellow liquor. Ours is grown in Fujian Province in the Japanese style. Processing of the leaf is done through a series of steams and drying to shape the leaf. The yellow infusion offers a robust and grassy taste. Sencha should be brewed carefully with water that is not too hot.
