The flowers are scented with a hint of Magnolia flower to add a very subtle taste to this high-grade green tea. Made by artisans in Anhui Province, it is a perfect compliment to a meal or a celebration. Approximately 20 pieces to a quarter pound. Steep in a glass vessel for viewing, water 185-195 degrees, for 3-4 minutes.

Made from a special cultivar of Camellia Sinensis, once withered the green leaves are sewn with silken thread into an elegant shape to set off a brilliant red clover blossom. Crafted early in the spring, the mushroom shaped tea is then infused with the scent of the Jasmine flower. Brew in a glass teapot or sturdy wine glass, water temperature of 185–195 degrees. This tea offers a wonderful drink and conversation piece. This varietal does not tend to get bitter, so the tea can be enjoyed throughout a meal and steeped multiple times.

This is a special and comparatively rare, elegant and noticeably smaller-leaf Dragon Well varietal from Zhejiang Province. This Lung Ching varietal is not typically commonly exported and found in our market. The varietal's leaf is definitive - very fresh green appearance and distinctly shorter and more uniform in length than the better known Dragon Wells. The result is an even tasting cup that is delicious and lightly sweet. The leaves are low fire and will cup to a light-yellow and clean liquor, just hints of nuttiness, with lingering aftertaste.

Truly one of China's finest green teas and becoming increasingly rare! The first impression is the wonderful shape and distinctly sweet aroma of the leaves. It cups to a nectar-like taste, with a finish that lingers sweet and clean. In Fujian Province, this tea is called "Mei Lan Chun" and is made with the slow growing varietal, "Mei Zhan". Growth is nurtured by clouds and mists that shroud the mountains producing a compact, very aromatic leaf. Easy to brew and enjoy. The tea is at its best with water temperature well below boiling. The leaves will offer multiple infusions.

A tea not often found outside China, Fragrant Sprout is a yellow that is pan-fired preserving its loose rolled shape and enhancing its very natural sweetness. Grown in Huang Shan Mountains, Anhui Province, this is a classic tea-growing region marked by rich pine forests and cold mountain streams. Picked in early April, once withered it is gently rolled into a loose round shapes often with a stem left intact. The stem adds depth, counters the sweet notes with a hint of astringency. The leaves unfurl releasing a round fruity-sweet cup. Being a yellow tea, it will steep to a very clear, light-yellow color.

A wonderful green tea characterized by its broad green-golden leaf. Not a common offering but at some point each year we find a lot. Perhaps the widest of the flat-leafed greens from Zhejiang Province, it is fired and worked by hand in a wok-like pan. Once fired, broad golden leaves impart a roasted and nutty flavor. It has a distinctive aroma that is fresh, it's gold and green color are very appealing visually and, once cupped, it will definitely satisfy.

Grown on a small tea farm in the higher elevations of the mountains near Fuzhou, in Fujian Province, a tea maker and true "artisan of the leaf" processed the very aromatic and tasty Mei Zhan green-tea varietal in the traditional pan-fired Xan Bei Xiang style. His process creates green tea leaves in wonderful shades of deep-green to light-gray colors that cup to a clear liquor with complex, nuanced flavors and naturally sweet notes. This is a prized, slow growing varietal made with a leaf process that is "old school" and increasingly rare. His tea farm uses organic methods and his tea is delicious!

A competition-grade lot grown in gardens surrounded by wild orchids high in the Huang Shan Mountains in Anhui Province. At night, the orchids release their fragrance and scent the tea leaves. Two leaves and a bud are plucked, withered and hand-flattened by working the leaf in a heated, wok-like bowl and then fired over wood coals in wicker baskets. A long (1-3 inches) and wide (1/8-1/4 inch), deep-green leaf offers a clean, nuanced taste and a very distinct and lasting finish. There is no comparable tea and we have an excellent lot!
