Consumed primarily in the province, it is not well known and its taste is provincial . It well exemplifies the endless varieties and styles farmers are capable of making. This tea will cup to a deep yellow-green color, strong with hints of asparagus and some astringency along with the vegetal notes. Matcha is a very finely ground Sencha or Bancha green tea. A brilliant green color, it is typically whisked in hot water, the tea dissolves giving a thin, intensely green drink that has a distinctive grassy taste. Ours is an organic tea that is beautiful in color and very rich in taste, antioxidants and made in China. Brew this tea by mixing hot water and Matcha (approximately 1 part tea to 8 parts water) and then stir it briskly with a tea whisk for 30 seconds or so.

Our Sencha is organic, the leaves are long and a rich, emerald green color flecked with shades of lighter green. Taste is slightly astringent and produces a yellow liquor. Ours is grown in Fujian Province in the Japanese style. Processing of the leaf is done through a series of steams and drying to shape the leaf. The yellow infusion offers a robust and grassy taste. Sencha should be brewed carefully with water that is not too hot.
