Yunnan Black - Fine Grade
"Tea is drunk to forget the din of the world", Chinese sage T'ien Yiheng.
According to legend, black tea was first produced by chance. Green tea in transport was exposed to air and oxidized. The aroma of the leaves was so attractive; the Chinese were implored to produce more of this delicious brew. In Yunnan Province, the "Dayah" varietal has long been made to wonderful black tea offerings. Its large, thick leaves produce malty aromatic teas. For this particular lot, one will note the leaves are more refined, a bit smaller, deep in color and fresh in taste. We find an additional note in this tea evidence of its complexity and notation as an "extra fine" grade. Lot # KN.
Why we selected this particular lot. As black teas are so popular, we look for new and interesting versions of this highly regarded cultivar. In this lot, we found a tea not only well crafted as evidenced by it consistent and well shaped leaf size; in addition, we found it has a complexity in the finish. There is bit more to the traditional Yunnan Black flavor profile, an added note of sweetness in the finish that makes this lot notable.
Interesting facts about this lot. Harvest date is April of 2016. Tea is made using the "Dayah" varietal of Yunnan Province. Note the mix of gold buds. The classification or name of "high grade" speaks to the fact the leaves are elegantly shaped and uniformity sized. This will result in an infusion that is balanced and smooth.
Taste profile. Full, round aroma, steeps to a lush, thirst quenching, smooth, sweet, and malty flavor. Note the lingering finish and how you feel after a taste.
Brewing suggestions. A tablespoon of leaf or 3 grams is typical for 8-12 ounces of water. Water temperature is ideal at 195-205 F. For a taste that is light and sweet, steep for 2-3 minutes. For a fuller bodied cup, let the leaves steep for 4 minutes. Drain the water from the leaves to allow for multiple steeps.
