The prized grades of this varietal are grown in the mountains along the coast of Fujian Province. Once withered and typically oven-air dried, the result is a mix of light-to-dark green leaves that are delicate, quite fragrant, offering a liquor suggestive of light-honey notes. This varietal has been grown in the mountains surrounding the Buddhist Drum Mountain Monastery for centuries. It is also known as a tea that monks enjoyed to keep alert and meditative. Easy to drink, it is refreshing and perhaps best enjoyed with baked treats.

A delicate scenting of a high-grade Yin Zhen (Silver Needle) with the scent of jasmine flowers creates this savory white. Harvested in Fujian Province early in the spring, the buds are slightly oxidized to make then more absorbent of the scent of fresh jasmine flowers. The result is a very soothing cup, a tea once available only to emperors is now widely enjoyed. Our tea is made by a tea maker whose specializes in making jasmine teas.

This lot of Silver Needle, made of plump Pre-Qing Ming spring buds, is grown in Zhenghe county and is traditionally processed. Plucked from the Zhenghe Da Bai tea varietal, it is masterfully worked to preserve its natural leaf shape. This tea is one for every tea drinker's collection. The bud is twinged with a greenish-gray hue and covered with the tender, downy hair giving it a velvety appearance. The liquor is soft yellow in color and delicate in flavor, savory with taste characteristics of melon and sweet apricot. It goes well most anytime and very well with fresh foods and desserts.

Elegant in its needle shape, our organic Yin Zhen is grown in Zhenghe county and made from the Da Bai varietal. Harvested in the very brief spring period this varietal requires, it is plucked preserving its elegant needle shape. This variety is slightly curved, thinner than many traditional offerings and is a bit greener color than our traditionally processed lot. Harvested in the first flush, these unopened buds release a savory flavor, delicate with a pronounced sweetness. Yin Zhen is one to enjoy solely for its taste. It also goes well with light meals, fresh vegetables and sweets.

Grown and harvested by a tea maker we know, this small lot was offered to us and upon tasting it, we think it captures the essence of the spring harvest. Yin Zhen is one of China's famous teas, a tea that should be tasted at least once in a tea drinker's lifetime. Light in color with hues of green and soft yellow, these buds are covered with tiny, downy hairs that give a velvety appearance. The cup color is pale with a delicate yet very evident flavor of fresh apricot or ripe melon. Yin Zhen is a variety of remarkable and ethereal Chinese teas that are made with an exacting skill in processing.

Our White Peony is harvested and traditionally processed from the first pluckings of spring in Fuding County. We buy this tea mindful its leaves should offer a mix of light and darker greens and plenty of silver buds to create its nuanced and sweet taste. Processed by withering in a warm room on bamboo racks and then heat dried, the blend of leaf colors, buds and stems will yield a clear straw-like cup color and multiple tastes of melon, grape and herbs. This tea goes very well with food and is quite good with sweets!

When brewed the cup is amber-colored, offering a smooth, sweet flavor with hints of melon and fruit. One of China's newer white teas, our lot is made to the greener color side of coloration with traditional fruity aromas and a round "mouth-feel".
